Ingredients:

  • 1 cup (120g) chocolate whey or casein protein powder
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1/2 tsp (3g) baking powder
  • 1/4 tsp (1.5g) salt
  • 1/2 cup (120g) plain Greek yogurt
  • 2 large (100g) eggs
  • 1/2 cup (60ml) maple syrup
  • 1 tsp (5ml) vanilla extract
  • 2 tbsp (28g) melted coconut oil

Instructions:

  1. In a large bowl, whisk together the eggs, Greek yogurt, maple syrup, vanilla extract, and melted coconut oil until the mixture is completely smooth.
  2. Sift the protein powder, cocoa powder, baking powder, and salt into the wet mixture.
  3. Gently fold the dry ingredients into the wet ingredients using a spatula until just combined, taking care not to over-mix.
  4. Pour the batter into an 8x8 inch baking pan lined with parchment paper.
  5. Bake at 350°F (175°C) for 20–25 minutes, removing from the oven when the edges are firm and the center has a very slight wobble.
