Ingredients:

  • 1 can (15 oz / 425g) mandarin orange slices, drained
  • 1 cup (245g) plain Greek yogurt

Instructions:

  1. Drain the mandarin orange slices using a fine mesh strainer and pat the slices gently with a paper towel to remove excess syrup.
  2. In a chilled mixing bowl, fold the drained mandarin slices into the Greek yogurt using a spatula until each slice is completely coated.
  3. Line a baking sheet with parchment paper. Using a medium cookie scoop, place small mounds of the mixture onto the tray, leaving 1 inch of space between each.
  4. Place the tray in the freezer for at least 3 hours until the bites are firm to the touch.
  5. Transfer the frozen bites to an airtight container or vacuum-seal bag to prevent freezer burn.
