Ingredients:
- 5 cups (750g) fresh peaches, peeled and sliced
- 1/2 cup (100g) granulated sugar
- 1 tbsp (8g) cornstarch
- 1 tbsp (15ml) fresh lemon juice
- 1/2 tsp (1g) ground cinnamon
- 1/4 tsp (1.5g) salt
- 1 box (432g) yellow or white cake mix
- 3/4 cup (170g) unsalted butter, melted
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, toss the sliced peaches with granulated sugar, cornstarch, lemon juice, cinnamon, and salt until evenly coated. Pour the mixture into a 9x13-inch baking dish and spread into a flat layer.
- Sprinkle the dry cake mix evenly over the top of the peaches. Use a spatula to lightly press the powder into the fruit, ensuring no large gaps remain, but do not stir the layers.
- Pour the melted butter evenly over the cake mix. Use a spoon to dot the butter across the surface, then lightly press the butter into the powder with fingers or a fork to eliminate dry spots.
- Bake for 40–45 minutes until the fruit is bubbling around the edges and the topping is a deep golden brown and firm to the touch.
