Ingredients:

  • 5 cups (750g) fresh peaches, peeled and sliced
  • 1/2 cup (100g) granulated sugar
  • 1 tbsp (8g) cornstarch
  • 1 tbsp (15ml) fresh lemon juice
  • 1/2 tsp (1g) ground cinnamon
  • 1/4 tsp (1.5g) salt
  • 1 box (432g) yellow or white cake mix
  • 3/4 cup (170g) unsalted butter, melted

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, toss the sliced peaches with granulated sugar, cornstarch, lemon juice, cinnamon, and salt until evenly coated. Pour the mixture into a 9x13-inch baking dish and spread into a flat layer.
  3. Sprinkle the dry cake mix evenly over the top of the peaches. Use a spatula to lightly press the powder into the fruit, ensuring no large gaps remain, but do not stir the layers.
  4. Pour the melted butter evenly over the cake mix. Use a spoon to dot the butter across the surface, then lightly press the butter into the powder with fingers or a fork to eliminate dry spots.
  5. Bake for 40–45 minutes until the fruit is bubbling around the edges and the topping is a deep golden brown and firm to the touch.
