Ingredients:
- 1 baguette, sliced into 1/2 inch rounds (340g)
- 3 tbsp extra virgin olive oil
- 8 oz fresh goat cheese
- 10 fresh figs, quartered lengthwise
- 2 tbsp honey
- 1 tsp fresh thyme leaves
- 4 oz prosciutto, thinly sliced
- 1/4 cup toasted walnut halves
- flaky sea salt to taste
- cracked black pepper to taste
Instructions:
- Preheat oven to 400°F (200°C). Arrange baguette slices in a single layer on a baking sheet and lightly brush the tops with olive oil.
- Toast in the oven for 5-7 minutes until the edges are mahogany-colored and the center is firm.
- Spread a generous teaspoon of softened goat cheese onto each warm toast and press two fig quarters, cut side up, firmly into the cheese.
- Drizzle honey evenly across the figs and cheese, then sprinkle with fresh thyme and a pinch of flaky sea salt.
- Return to the oven for 5-8 minutes, until the honey is bubbling and the figs look glossy and slightly softened.
- Remove from heat and immediately add chosen garnish, such as walnuts or prosciutto, while the honey is still tacky.
