Ingredients:
- 2 cups (250g) fresh figs, stemmed and quartered
- 3/4 cup (85g) raw walnuts
- 2 tbsp (30ml) pure maple syrup
- 1/2 tsp (3g) sea salt
- 1 tsp (2g) ground cinnamon
- 1/2 tsp (1g) vanilla extract
- 1/4 cup (30g) shredded unsweetened coconut
Instructions:
- Wash the fresh figs and pat them dry. Quarter them and place them in a small saucepan over medium heat for 5-8 minutes, stirring occasionally until the figs soften and release their juices into a thick, syrupy consistency. Remove from heat and let cool slightly.
- Add the walnuts, maple syrup, sea salt, cinnamon, and vanilla extract into a food processor. Pulse 5-7 times until the walnuts are finely chopped but not powdered.
- Add the softened figs to the food processor and pulse for 10-15 seconds until the mixture becomes a cohesive, tacky dough.
- Line a baking sheet with parchment paper. Scoop roughly 1 tablespoon of the mixture and roll it between your palms into a smooth ball.
- Immediately roll the ball in shredded coconut until coated and place on the prepared baking sheet.
- Chill the bites in the refrigerator for 30 minutes to set the structure.
