Ingredients:

  • 4 cups (600g) fresh peaches, peeled and sliced
  • 1/2 cup (100g) granulated sugar
  • 1 tbsp (8g) cornstarch
  • 1 tsp (2g) ground cinnamon
  • 1 tbsp (15ml) lemon juice
  • 1/2 cup (115g) unsalted butter
  • 1 cup (200g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tbsp (12g) baking powder
  • 1/4 tsp (1.5g) salt
  • 1 cup (240ml) whole milk

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, toss the sliced peaches with granulated sugar, cornstarch, cinnamon, and lemon juice until evenly coated and juices are drawn out.
  3. Pour the peach mixture into the baking dish, spreading them into an even layer.
  4. Place the butter in the baking dish and melt it (in the oven or microwave), ensuring the melted butter coats the bottom of the pan completely.
  5. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  6. Stir in the milk until just combined, leaving a few lumps.
  7. Pour the batter slowly over the melted butter without stirring.
  8. Bake for 40–45 minutes until the top is mahogany-colored and peaches are bubbling vigorously around the edges.
