Ingredients:
- 4 cups (600g) fresh peaches, peeled and sliced
- 1/2 cup (100g) granulated sugar
- 1 tbsp (8g) cornstarch
- 1 tsp (2g) ground cinnamon
- 1 tbsp (15ml) lemon juice
- 1/2 cup (115g) unsalted butter
- 1 cup (200g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tbsp (12g) baking powder
- 1/4 tsp (1.5g) salt
- 1 cup (240ml) whole milk
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, toss the sliced peaches with granulated sugar, cornstarch, cinnamon, and lemon juice until evenly coated and juices are drawn out.
- Pour the peach mixture into the baking dish, spreading them into an even layer.
- Place the butter in the baking dish and melt it (in the oven or microwave), ensuring the melted butter coats the bottom of the pan completely.
- In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
- Stir in the milk until just combined, leaving a few lumps.
- Pour the batter slowly over the melted butter without stirring.
- Bake for 40–45 minutes until the top is mahogany-colored and peaches are bubbling vigorously around the edges.
