Ingredients:

  • 1 large egg
  • 0.5 cup shredded mozzarella cheese
  • 1 tbsp blanched almond flour
  • 0.125 tsp baking powder
  • 1 pinch fine sea salt
  • 2 tbsp shredded parmesan cheese

Instructions:

  1. Plug in your mini waffle maker. While it heats, whisk the egg, almond flour, baking powder, and salt in a small bowl until frothy.
  2. Fold in half of the shredded mozzarella (1/4 cup) into the egg mixture.
  3. Once the iron is hot, sprinkle 1 tablespoon of the parmesan cheese directly onto the bottom plate.
  4. Pour half of the egg and mozzarella batter over the cheese layer.
  5. Immediately sprinkle another tablespoon of parmesan cheese on top of the batter.
  6. Close the lid and cook for 3 to 4 minutes without opening, or until steam stops rising and the exterior is rigid.
  7. Remove with a silicone spatula and repeat the process for the second chaffle.
