Ingredients:
- 4 very overripe bananas (approximately 1.5 cups mashed)
- 0.33 cup neutral oil (avocado or light olive oil)
- 0.5 cup light brown sugar, packed
- 1 large egg, room temperature
- 1 tsp pure vanilla extract
- 2 tbsp plain Greek yogurt
- 1.5 cups all-purpose flour
- 1 tsp baking soda
- 0.5 tsp fine sea salt
- 1 tsp ground cinnamon
Instructions:
- Preheat your oven to 350°F (180°C). Grease a 9x5-inch loaf pan and line it with parchment paper, leaving an overhang on the sides.
- In a large mixing bowl, mash the overripe bananas with a fork or potato masher until mostly liquid. Whisk in the oil, brown sugar, egg, vanilla, and Greek yogurt until the mixture is smooth and slightly bubbly.
- Sift the all-purpose flour, baking soda, cinnamon, and salt directly over the wet banana mixture.
- Using a silicone spatula, gently fold the dry ingredients into the wet mixture. Stop immediately once no streaks of dry flour remain to avoid overworking the gluten.
- Pour the batter into the prepared loaf pan. Bake for 1 hours, or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack.
