Ingredients:

  • 4 very overripe bananas (approximately 1.5 cups mashed)
  • 0.33 cup neutral oil (avocado or light olive oil)
  • 0.5 cup light brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract
  • 2 tbsp plain Greek yogurt
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp fine sea salt
  • 1 tsp ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (180°C). Grease a 9x5-inch loaf pan and line it with parchment paper, leaving an overhang on the sides.
  2. In a large mixing bowl, mash the overripe bananas with a fork or potato masher until mostly liquid. Whisk in the oil, brown sugar, egg, vanilla, and Greek yogurt until the mixture is smooth and slightly bubbly.
  3. Sift the all-purpose flour, baking soda, cinnamon, and salt directly over the wet banana mixture.
  4. Using a silicone spatula, gently fold the dry ingredients into the wet mixture. Stop immediately once no streaks of dry flour remain to avoid overworking the gluten.
  5. Pour the batter into the prepared loaf pan. Bake for 1 hours, or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack.
