Ingredients:

  • 3 large overripe bananas (approx. 450g), mashed
  • 2 cups (250g) self-rising flour
  • 1/2 cup (120ml) maple syrup or honey

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, use a fork to mash the bananas until they reach a smooth, liquid-like consistency with only a few small lumps remaining.
  3. Stir in the maple syrup or honey until fully incorporated.
  4. Add the self-rising flour to the banana mixture and gently fold it in with a spatula until no streaks of white flour are visible; do not overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 60–65 minutes until the exterior is deep golden-brown and a toothpick inserted into the center comes out with a few moist crumbs attached.
