Ingredients:
- 2 oz deli turkey breast, cubed or rolled
- 1 large hard-boiled egg, halved lengthwise
- 20g whole grain crackers
- 1/4 cup cucumber, peeled and sliced into half-moons
- 1/4 cup fresh blueberries
- 2 tbsp hummus
Instructions:
- Slice the cucumber into half-moons and halve the hard-boiled egg. Roll turkey slices tightly and slice into bite-sized coins to prevent choking.
- Place the hard-boiled egg and turkey in the largest compartment of the bento box. Fill the smallest compartment with hummus and use silicone liners to separate blueberries and crackers.
- Close the lid firmly and place the bento box into an insulated lunch bag with a slim ice pack against the side to maintain temperature.
