Ingredients:

  • 2 oz deli turkey breast, cubed or rolled
  • 1 large hard-boiled egg, halved lengthwise
  • 20g whole grain crackers
  • 1/4 cup cucumber, peeled and sliced into half-moons
  • 1/4 cup fresh blueberries
  • 2 tbsp hummus

Instructions:

  1. Slice the cucumber into half-moons and halve the hard-boiled egg. Roll turkey slices tightly and slice into bite-sized coins to prevent choking.
  2. Place the hard-boiled egg and turkey in the largest compartment of the bento box. Fill the smallest compartment with hummus and use silicone liners to separate blueberries and crackers.
  3. Close the lid firmly and place the bento box into an insulated lunch bag with a slim ice pack against the side to maintain temperature.
