Ingredients:
- 1/2 large fresh ripe peach, pitted and sliced (approx. 60g)
- 1/2 oz fresh lime juice
- 1/4 oz light agave nectar
- 2 oz premium Cuban-style white rum
- 2 dashes orange bitters
- 1 thin fresh peach slice
- 1 small sprig fresh mint
Instructions:
- Place the fresh peach slices, lime juice, and agave nectar into the bottom of a cocktail shaker.
- Muddle the ingredients firmly until the peach is completely broken down into a jam-like consistency to release natural juices and aromatics.
- Add the white rum and orange bitters to the shaker.
- Fill the shaker 3/4 full with large, solid ice cubes and shake vigorously for 15–20 seconds until the shaker is frosted.
- Double strain the mixture through a Hawthorne strainer and a fine-mesh sieve into a chilled coupe or martini glass to ensure a silky texture.
- Garnish with a thin peach slice and a sprig of fresh mint.
