Ingredients:

  • 1/2 large fresh ripe peach, pitted and sliced (approx. 60g)
  • 1/2 oz fresh lime juice
  • 1/4 oz light agave nectar
  • 2 oz premium Cuban-style white rum
  • 2 dashes orange bitters
  • 1 thin fresh peach slice
  • 1 small sprig fresh mint

Instructions:

  1. Place the fresh peach slices, lime juice, and agave nectar into the bottom of a cocktail shaker.
  2. Muddle the ingredients firmly until the peach is completely broken down into a jam-like consistency to release natural juices and aromatics.
  3. Add the white rum and orange bitters to the shaker.
  4. Fill the shaker 3/4 full with large, solid ice cubes and shake vigorously for 15–20 seconds until the shaker is frosted.
  5. Double strain the mixture through a Hawthorne strainer and a fine-mesh sieve into a chilled coupe or martini glass to ensure a silky texture.
  6. Garnish with a thin peach slice and a sprig of fresh mint.
