Ingredients:
- 1 lb (450g) ground Italian sausage
- 2 tbsp (30ml) olive oil
- 1 medium (110g) yellow onion, diced
- 3 cloves (15g) garlic, minced
- 1 tsp (5g) dried oregano
- 6 cups (1.4L) chicken broth
- 1 can (14.5 oz / 411g) diced tomatoes
- 1 cup (240ml) heavy cream
- 1 tsp (5g) salt
- ½ tsp (3g) cracked black pepper
- 1 package (19 oz / 540g) refrigerated cheese tortellini
- 5 oz (140g) fresh baby spinach, packed
- ½ cup (50g) grated Parmesan cheese
Instructions:
- Heat olive oil in the Dutch oven over medium-high heat. Add the Italian sausage, breaking it apart with your spoon, and cook until browned and no longer pink.
- Stir in the diced onion and cook for 3-4 minutes until translucent.
- Add the minced garlic and oregano; stir for 60 seconds until fragrant.
- Pour in the chicken broth and diced tomatoes with their juices. Increase heat to bring to a gentle boil, then reduce to a simmer for 10 minutes.
- Stir in the salt and black pepper.
- Add the refrigerated cheese tortellini to the simmering broth. Cook for 3-5 minutes until they float to the surface.
- Turn the heat to low and stir in the heavy cream and grated Parmesan.
- Fold in the fresh baby spinach and stir for 1 minute until leaves are wilted but still vibrant green. Remove from heat immediately.
