Ingredients:

  • 1.5 cups frozen pineapple chunks
  • 0.5 cup pineapple juice
  • 0.25 cup plain Greek yogurt
  • 2 tbsp full-fat coconut milk
  • 1 tsp honey

Instructions:

  1. Pour the pineapple juice and coconut milk into the blender first to create a vortex for the solids.
  2. Add the Greek yogurt to the liquid base.
  3. Pile the frozen pineapple chunks on top of the yogurt.
  4. Start the blender on the lowest setting and pulse 5-6 times until the fruit is broken into small bits.
  5. Drizzle in the honey.
  6. Increase the speed to high and blend for 30-45 seconds until the mixture is completely uniform and velvety.
  7. Stop the blender and stir with a spoon to check for any hidden chunks.
  8. Pour immediately into a glass.
