Ingredients:
- 170 g high-quality white chocolate, finely chopped
- 57 g softened cream cheese, room temperature
- 6 g fresh lemon zest
- 5 ml fresh lemon juice
- 1 g salt
- 30 g powdered sugar (for rolling)
- 15 g desiccated coconut (optional for coating)
Instructions:
- Melt the chopped white chocolate in 30-second bursts in the microwave, stirring in between until the texture is glossy and fluid.
- Fold in the softened cream cheese, lemon zest, lemon juice, and salt. Stir vigorously until the mixture is uniform and pale yellow.
- Transfer the mixture to a shallow container or onto a parchment-lined tray. Cover with plastic wrap and refrigerate for at least 60 minutes.
- Using a small scoop, portion the chilled mixture and quickly roll into smooth, spherical bites.
- Toss each ball in the powdered sugar or coconut until fully coated and return to the fridge for 10 minutes before serving.
