Ingredients:

  • 170 g high-quality white chocolate, finely chopped
  • 57 g softened cream cheese, room temperature
  • 6 g fresh lemon zest
  • 5 ml fresh lemon juice
  • 1 g salt
  • 30 g powdered sugar (for rolling)
  • 15 g desiccated coconut (optional for coating)

Instructions:

  1. Melt the chopped white chocolate in 30-second bursts in the microwave, stirring in between until the texture is glossy and fluid.
  2. Fold in the softened cream cheese, lemon zest, lemon juice, and salt. Stir vigorously until the mixture is uniform and pale yellow.
  3. Transfer the mixture to a shallow container or onto a parchment-lined tray. Cover with plastic wrap and refrigerate for at least 60 minutes.
  4. Using a small scoop, portion the chilled mixture and quickly roll into smooth, spherical bites.
  5. Toss each ball in the powdered sugar or coconut until fully coated and return to the fridge for 10 minutes before serving.
