Ingredients:
- 3 tbsp unsalted butter, melted
- 1/4 cup light brown sugar, packed
- 1 tsp ground cinnamon
- 1/2 tsp kosher salt
- 1/4 tsp ground nutmeg
- 2 lbs sweet potatoes, peeled and cut into 1-inch cubes
Instructions:
- Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
- In a large mixing bowl, whisk together the melted butter, brown sugar, cinnamon, salt, and nutmeg until a thick paste forms.
- Add the sweet potato cubes to the bowl and toss vigorously with a spatula until every cube is fully coated in the glaze.
- Spread the potatoes onto the baking sheet in a single layer, ensuring no two cubes are touching to prevent steaming.
- Roast for 20–25 minutes, flipping halfway through, until the edges are caramelized and the centers are tender when pierced with a fork.
