Ingredients:

  • 3 tbsp unsalted butter, melted
  • 1/4 cup light brown sugar, packed
  • 1 tsp ground cinnamon
  • 1/2 tsp kosher salt
  • 1/4 tsp ground nutmeg
  • 2 lbs sweet potatoes, peeled and cut into 1-inch cubes

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the melted butter, brown sugar, cinnamon, salt, and nutmeg until a thick paste forms.
  3. Add the sweet potato cubes to the bowl and toss vigorously with a spatula until every cube is fully coated in the glaze.
  4. Spread the potatoes onto the baking sheet in a single layer, ensuring no two cubes are touching to prevent steaming.
  5. Roast for 20–25 minutes, flipping halfway through, until the edges are caramelized and the centers are tender when pierced with a fork.
