Ingredients:

  • 1 cup (225g) unsalted butter, softened to room temperature
  • 1 cup (200g) packed light brown sugar
  • 1/2 cup (100g) granulated white sugar
  • 2 large eggs, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 3 cups (270g) old-fashioned rolled oats
  • 2 cups (340g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a 9x13 inch baking pan with parchment paper.
  2. Cream together the softened butter, brown sugar, and white sugar until the mixture is pale and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract, ensuring the emulsion is smooth.
  4. In a separate small bowl, whisk together the flour, baking soda, and salt.
  5. Gradually stir the dry ingredients into the wet mixture using a spatula until just combined.
  6. Fold in the rolled oats and chocolate chips until the dough is thick and mahogany-colored.
  7. Spread the dough evenly into the prepared pan, pressing down gently.
  8. Bake for 20–22 minutes, until the edges are puffed and lightly browned while the center still has a slight give.
  9. Allow the bars to cool completely in the pan to set the chewy texture before slicing.
