- 1 lb ground pork sausage
- 8 oz sharp cheddar cheese, freshly grated
- 4 oz full-fat cream cheese, softened
- 1.5 cups super-fine almond flour
- 2 tbsp coconut flour
- 1 tsp baking powder
- 2 large eggs, room temperature
- 1 tsp garlic powder
- 0.5 tsp onion powder
- 1 tbsp fresh chives, finely minced
Instructions:
- In a large mixing bowl, combine the softened cream cheese, room temperature eggs, garlic powder, and onion powder. Use an electric hand mixer to beat the ingredients until the mixture is velvety and smooth.
- Add the ground pork sausage to the bowl. Mix on low speed until just combined, ensuring the fat is evenly distributed throughout the emulsion.
- Fold in the almond flour, coconut flour, and baking powder. Gradually add the freshly shredded cheddar cheese. Mix until the dough is thick and slightly tacky.
- Let the dough sit for 5 minutes to allow the coconut flour to fully hydrate, which improves the structure and handleability.
- Preheat the oven to 400°F (200°C). Use a 1-inch cookie scoop to portion the mixture and roll into uniform balls.
- Place the balls 1 inch apart on a large baking sheet lined with parchment paper. Bake for 18–22 minutes until the tops are golden-brown and the internal temperature reaches 160°F.
