Ingredients:
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 2 cups whole milk
- 8 oz sharp cheddar cheese, freshly grated
- 1/4 tsp dry mustard powder
- 1/8 tsp cayenne pepper
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions:
- Melt the butter over medium heat until it bubbles.
- Whisk in the flour and cook for 1–2 minutes until a pale gold color and nutty aroma develops; do not let it brown.
- Slowly pour in the milk while whisking constantly.
- Continue to simmer over medium heat, stirring frequently, until the mixture thickens enough to coat the back of a spoon (approximately 3–5 minutes).
- Stir in the mustard powder, cayenne, salt, and pepper.
- Turn the heat to low or remove the pan from the burner entirely.
- Add the freshly grated cheddar one handful at a time, stirring gently until completely melted and the sauce is glossy.
- Remove from heat immediately once the cheese is fully incorporated.
