Ingredients:

  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk
  • 8 oz sharp cheddar cheese, freshly grated
  • 1/4 tsp dry mustard powder
  • 1/8 tsp cayenne pepper
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Instructions:

  1. Melt the butter over medium heat until it bubbles.
  2. Whisk in the flour and cook for 1–2 minutes until a pale gold color and nutty aroma develops; do not let it brown.
  3. Slowly pour in the milk while whisking constantly.
  4. Continue to simmer over medium heat, stirring frequently, until the mixture thickens enough to coat the back of a spoon (approximately 3–5 minutes).
  5. Stir in the mustard powder, cayenne, salt, and pepper.
  6. Turn the heat to low or remove the pan from the burner entirely.
  7. Add the freshly grated cheddar one handful at a time, stirring gently until completely melted and the sauce is glossy.
  8. Remove from heat immediately once the cheese is fully incorporated.
