Ingredients:

  • 1/2 cup (115g) unsalted butter
  • 3/4 cup (150g) light brown sugar
  • 3 large peaches (450g), pitted and sliced into 1/2 inch wedges
  • 1/2 tsp (2g) ground cinnamon
  • 1/4 tsp (1.5g) sea salt
  • 1 1/2 cups (190g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 2 tsp (10g) baking powder
  • 1/2 tsp (3g) salt
  • 1/2 cup (115g) unsalted butter, softened
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • 1/2 cup (120ml) whole milk

Instructions:

  1. Place the skillet over medium heat. Melt the butter, then stir in the brown sugar and salt until the mixture bubbles and looks like a thick syrup.
  2. Arrange the peach slices in concentric circles atop the syrup and sprinkle with cinnamon.
  3. Cook for 2-3 minutes just until the peaches begin to soften and the aroma smells nutty and toasted. Remove from heat.
  4. In a bowl, combine flour, granulated sugar, baking powder, and salt.
  5. Beat the softened butter into the dry mixture until the texture resembles coarse sand.
  6. Add eggs one at a time, then stir in the vanilla extract and milk. Mix just until combined.
  7. Carefully pour the batter over the caramelized peaches and bake for 35 minutes or until a toothpick comes out clean.
