Ingredients:
- 1/2 cup (115g) unsalted butter
- 3/4 cup (150g) light brown sugar
- 3 large peaches (450g), pitted and sliced into 1/2 inch wedges
- 1/2 tsp (2g) ground cinnamon
- 1/4 tsp (1.5g) sea salt
- 1 1/2 cups (190g) all-purpose flour
- 1 cup (200g) granulated sugar
- 2 tsp (10g) baking powder
- 1/2 tsp (3g) salt
- 1/2 cup (115g) unsalted butter, softened
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1/2 cup (120ml) whole milk
Instructions:
- Place the skillet over medium heat. Melt the butter, then stir in the brown sugar and salt until the mixture bubbles and looks like a thick syrup.
- Arrange the peach slices in concentric circles atop the syrup and sprinkle with cinnamon.
- Cook for 2-3 minutes just until the peaches begin to soften and the aroma smells nutty and toasted. Remove from heat.
- In a bowl, combine flour, granulated sugar, baking powder, and salt.
- Beat the softened butter into the dry mixture until the texture resembles coarse sand.
- Add eggs one at a time, then stir in the vanilla extract and milk. Mix just until combined.
- Carefully pour the batter over the caramelized peaches and bake for 35 minutes or until a toothpick comes out clean.
