Ingredients:

  • 1/2 cup unsalted butter (115g)
  • 2 cups all-purpose flour (250g)
  • 1 tbsp baking powder (15g)
  • 1 tbsp granulated sugar (12g)
  • 1/2 tsp salt (3g)
  • 1 cup buttermilk (240ml)

Instructions:

  1. Preheat your oven to 450°F (230°C).
  2. Place the 1/2 cup (115g) of butter in your 9x9 inch square baking dish.
  3. Slide the butter filled pan into the oven to melt and shimmer while the oven finishes preheating. Note: The butter should be hot and fluid before the batter hits it.
  4. In a large mixing bowl, whisk together the all purpose flour, baking powder, granulated sugar, and salt.
  5. Pour in the 1 cup of buttermilk.
  6. Stir with a spatula until just combined. Keep the batter lumpy to ensure a tender crumb. Note: Stop as soon as the flour streaks disappear.
  7. Carefully remove the shimmering hot pan from the oven.
  8. Pour the batter directly over the melted butter, spreading it gently to the edges.
  9. Return the pan to the oven and bake for 15-20 minutes.
  10. Remove when the top is golden and the edges have a deep mahogany color.
