Ingredients:
- 1/2 cup unsalted butter (115g)
- 2 cups all-purpose flour (250g)
- 1 tbsp baking powder (15g)
- 1 tbsp granulated sugar (12g)
- 1/2 tsp salt (3g)
- 1 cup buttermilk (240ml)
Instructions:
- Preheat your oven to 450°F (230°C).
- Place the 1/2 cup (115g) of butter in your 9x9 inch square baking dish.
- Slide the butter filled pan into the oven to melt and shimmer while the oven finishes preheating. Note: The butter should be hot and fluid before the batter hits it.
- In a large mixing bowl, whisk together the all purpose flour, baking powder, granulated sugar, and salt.
- Pour in the 1 cup of buttermilk.
- Stir with a spatula until just combined. Keep the batter lumpy to ensure a tender crumb. Note: Stop as soon as the flour streaks disappear.
- Carefully remove the shimmering hot pan from the oven.
- Pour the batter directly over the melted butter, spreading it gently to the edges.
- Return the pan to the oven and bake for 15-20 minutes.
- Remove when the top is golden and the edges have a deep mahogany color.
