Ingredients:

  • 1.5 cups all-purpose flour

  • 1 large egg
  • 0.5 cup sour cream
  • 1 tsp vanilla extract
  • 2 cups fresh peaches, sliced
  • 1 tbsp brown sugar
  • 1 tsp ground cinnamon
  • 4 tbsp unsalted butter
  • 0.5 cup packed brown sugar
  • 2 tbsp heavy cream
  • 1 cup powdered sugar, sifted

Instructions:

  1. Beat the softened butter and brown sugar until the mixture looks pale and fluffy.
  2. Add the egg, sour cream, and vanilla extract, mixing on medium speed until the batter is velvety and cohesive.
  3. Sift in the flour, baking powder, baking soda, and salt. Fold gently with a spatula until just combined.
  4. In a small bowl, toss sliced peaches with 1 tbsp brown sugar and cinnamon.
  5. Pour the batter into a prepared 8-inch round or 8x8 square pan. Arrange the peach slices on top in a concentric circle, pressing them slightly into the batter.
  6. Bake at 350°F (175°C) for 25-30 minutes until the edges pull away from the pan and a toothpick comes out clean.
  7. Melt butter and brown sugar in a saucepan over medium heat.
  8. Stir in heavy cream and sifted powdered sugar until the frosting is glossy and smooth.
  9. Pour the frosting over the warm Brown Sugar Peach Cake.
