Ingredients:
- 1.5 cups all-purpose flour
- 0.75 cup packed light brown sugar

- 0.5 tsp baking soda

- 0.5 cup unsalted butter, softened
- 1 large egg
- 0.5 cup sour cream
- 1 tsp vanilla extract
- 2 cups fresh peaches, sliced
- 1 tbsp brown sugar
- 1 tsp ground cinnamon
- 4 tbsp unsalted butter
- 0.5 cup packed brown sugar
- 2 tbsp heavy cream
- 1 cup powdered sugar, sifted
Instructions:
- Beat the softened butter and brown sugar until the mixture looks pale and fluffy.
- Add the egg, sour cream, and vanilla extract, mixing on medium speed until the batter is velvety and cohesive.
- Sift in the flour, baking powder, baking soda, and salt. Fold gently with a spatula until just combined.
- In a small bowl, toss sliced peaches with 1 tbsp brown sugar and cinnamon.
- Pour the batter into a prepared 8-inch round or 8x8 square pan. Arrange the peach slices on top in a concentric circle, pressing them slightly into the batter.
- Bake at 350°F (175°C) for 25-30 minutes until the edges pull away from the pan and a toothpick comes out clean.
- Melt butter and brown sugar in a saucepan over medium heat.
- Stir in heavy cream and sifted powdered sugar until the frosting is glossy and smooth.
- Pour the frosting over the warm Brown Sugar Peach Cake.
