Ingredients:
- 16 oz low sodium refried beans
- 2 tbsp lime juice
- 1 tsp ground cumin
- 1 cup non fat plain Greek yogurt
- 1 cup prepared guacamole
- 2 tbsp low sodium taco seasoning
- 1 cup chunky salsa, drained
- 1.5 cups sharp cheddar cheese, finely shredded
- 0.5 cup black olives, sliced
- 0.5 cup green onions, sliced thin
Instructions:
- Mix the 16 oz refried beans with 1 tsp ground cumin and 1 tbsp of the lime juice in a small bowl.
- Transfer the bean mixture to your 9x13 dish and smooth it out with a spatula.
- Whisk the 1 cup of Greek yogurt with the 2 tbsp of taco seasoning until it's a uniform, pale orange color.
- Carefully spread the yogurt mixture over the beans, going right to the edges to seal the bottom layer.
- Spoon the 1 cup of guacamole over the yogurt and spread it gently.
- Place the 1 cup of chunky salsa into a fine mesh sieve over a bowl and let it sit for 10 minutes.
- Spread the drained salsa over the guacamole layer.
- Sprinkle the 1.5 cups of finely shredded cheddar evenly across the top.
- Scatter the 0.5 cup of sliced olives and 0.5 cup of thin green onions over the cheese.
- Cover and refrigerate for at least 30 minutes until the dish feels cold to the touch.
