Ingredients:

  • 16 oz low sodium refried beans
  • 2 tbsp lime juice
  • 1 tsp ground cumin
  • 1 cup non fat plain Greek yogurt
  • 1 cup prepared guacamole
  • 2 tbsp low sodium taco seasoning
  • 1 cup chunky salsa, drained
  • 1.5 cups sharp cheddar cheese, finely shredded
  • 0.5 cup black olives, sliced
  • 0.5 cup green onions, sliced thin

Instructions:

  1. Mix the 16 oz refried beans with 1 tsp ground cumin and 1 tbsp of the lime juice in a small bowl.
  2. Transfer the bean mixture to your 9x13 dish and smooth it out with a spatula.
  3. Whisk the 1 cup of Greek yogurt with the 2 tbsp of taco seasoning until it's a uniform, pale orange color.
  4. Carefully spread the yogurt mixture over the beans, going right to the edges to seal the bottom layer.
  5. Spoon the 1 cup of guacamole over the yogurt and spread it gently.
  6. Place the 1 cup of chunky salsa into a fine mesh sieve over a bowl and let it sit for 10 minutes.
  7. Spread the drained salsa over the guacamole layer.
  8. Sprinkle the 1.5 cups of finely shredded cheddar evenly across the top.
  9. Scatter the 0.5 cup of sliced olives and 0.5 cup of thin green onions over the cheese.
  10. Cover and refrigerate for at least 30 minutes until the dish feels cold to the touch.
