Ingredients:

  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 1 tsp fine sea salt
  • 1 tsp dried rubbed sage
  • 0.5 tsp dried thyme
  • 0.5 tsp freshly cracked black pepper
  • 0.25 tsp red pepper flakes
  • 0.25 tsp garlic powder
  • 0.25 tsp onion powder
  • 0.125 tsp ground allspice
  • 1 tbsp pure maple syrup

Instructions:

  1. In a small bowl, pre-mix all dry spices (salt, sage, thyme, pepper, red pepper flakes, garlic powder, onion powder, and allspice) to ensure even distribution.
  2. Gently fold the spice mixture and maple syrup into the chilled ground beef. Avoid over-mixing to maintain a tender texture.
  3. Optional: Let the mixture rest in the refrigerator for 30 minutes to allow the flavors to meld.
  4. Divide the beef into 8 equal portions and form into discs approximately 1/2 inch thick. Press a slight indentation into the center of each patty.
  5. Heat a heavy-bottomed skillet over medium-high heat. Sear the patties for 3–4 minutes per side until a golden brown crust forms and the internal temperature reaches 160°F (71°C).
