Ingredients:
- 6 cups Crispy rice cereal
- 4 tbsp Unsalted light butter
- 10 oz Mini marshmallows
- 1/2 tsp Pure vanilla extract
- 1 cup Powdered sugar
- 1 tbsp Milk
- 1 drop Red gel food coloring
- 1/4 tsp Vanilla extract
Instructions:
- Place the butter in the pot over low heat until completely melted and bubbling slightly.
- Add the marshmallows, stirring constantly until velvety and smooth, then remove from heat immediately. Note: Overheating here leads to rock hard treats.
- Stir in the vanilla extract, then quickly fold in the crispy rice cereal until every piece is coated in white.
- Transfer the mixture to a greased 9x9 inch baking pan and press gently until level but not packed tightly.
- Place the pan in the fridge for 15 minutes until the base feels firm to the touch.
- Use a 2 inch circular cookie cutter to stamp out 12 even rounds.
- Lightly press the sides of each circle with a finger until the edges are slightly rounded to mimic a baseball.
- Whisk the powdered sugar, milk, vanilla, and red gel coloring until the icing is thick enough to hold a peak.
- Fill a piping bag and pipe two curved lines across each treat, adding small perpendicular ticks until they look like baseball laces.
- Let the icing air dry for 20 minutes until the red laces are set and no longer tacky.
