Ingredients:
- 4 (6-oz) salmon fillets, center-cut, skin-on
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 1 tbsp avocado oil
- 1/3 cup honey
- 3 tbsp low-sodium soy sauce
- 1 tbsp fresh lemon juice
- 4 cloves garlic, finely minced
- 1/2 tsp red pepper flakes
Instructions:
- Pat the 4 salmon fillets bone dry with paper towels. Note: Moisture is the enemy of a good sear. Season the kosher salt and black pepper evenly over both sides of the fillets.
- In a small bowl, combine the honey, soy sauce, lemon juice, minced garlic, and red pepper flakes.
- Add avocado oil to an oven safe skillet over medium high heat until the oil shimmers and barely wisps smoke.
- Place fillets skin side up in the pan and cook for 2-3 minutes until a golden brown crust forms.
- Flip carefully. Turn the fillets over so the skin is now touching the pan. Pour the honey garlic mixture over the salmon and into the pan.
- Transfer the skillet to the preheated 400°F oven for 5-7 minutes until the fish flakes easily with a fork.
- Spoon the thickened pan sauce over the salmon and let it rest for 3 minutes before serving.
