Ingredients:

  • 4 (6-oz) salmon fillets, center-cut, skin-on
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1 tbsp avocado oil
  • 1/3 cup honey
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp fresh lemon juice
  • 4 cloves garlic, finely minced
  • 1/2 tsp red pepper flakes

Instructions:

  1. Pat the 4 salmon fillets bone dry with paper towels. Note: Moisture is the enemy of a good sear. Season the kosher salt and black pepper evenly over both sides of the fillets.
  2. In a small bowl, combine the honey, soy sauce, lemon juice, minced garlic, and red pepper flakes.
  3. Add avocado oil to an oven safe skillet over medium high heat until the oil shimmers and barely wisps smoke.
  4. Place fillets skin side up in the pan and cook for 2-3 minutes until a golden brown crust forms.
  5. Flip carefully. Turn the fillets over so the skin is now touching the pan. Pour the honey garlic mixture over the salmon and into the pan.
  6. Transfer the skillet to the preheated 400°F oven for 5-7 minutes until the fish flakes easily with a fork.
  7. Spoon the thickened pan sauce over the salmon and let it rest for 3 minutes before serving.
