Ingredients:
- 12 fresh figs (approx. 1 lb)
- 4 oz soft goat cheese
- 2 tbsp honey
- 1 tbsp balsamic glaze
- 1/4 cup chopped walnuts
- 1 tsp fresh thyme leaves
- 1 pinch flaky sea salt
Instructions:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Use a paring knife to cut a deep 'X' into the top of each fig, slicing about halfway through the flesh.
- Gently press the sides of the 'X' to open the fig slightly, creating a clean pocket for the cheese.
- Spoon about 1 heaping teaspoon of room-temperature goat cheese into the center of each fig.
- Drizzle approximately 1/2 teaspoon of honey over the cheese in each fig.
- Place the figs on the baking sheet and roast for 12–15 minutes until the edges soften and the cheese is bubbling and slightly golden.
- Remove from the oven and immediately sprinkle the chopped walnuts and fresh thyme over the top.
- Finish with a drizzle of balsamic glaze and a tiny pinch of flaky sea salt to enhance the sugars.
