Ingredients:

  • 12 fresh figs (approx. 1 lb)
  • 4 oz soft goat cheese
  • 2 tbsp honey
  • 1 tbsp balsamic glaze
  • 1/4 cup chopped walnuts
  • 1 tsp fresh thyme leaves
  • 1 pinch flaky sea salt

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Use a paring knife to cut a deep 'X' into the top of each fig, slicing about halfway through the flesh.
  3. Gently press the sides of the 'X' to open the fig slightly, creating a clean pocket for the cheese.
  4. Spoon about 1 heaping teaspoon of room-temperature goat cheese into the center of each fig.
  5. Drizzle approximately 1/2 teaspoon of honey over the cheese in each fig.
  6. Place the figs on the baking sheet and roast for 12–15 minutes until the edges soften and the cheese is bubbling and slightly golden.
  7. Remove from the oven and immediately sprinkle the chopped walnuts and fresh thyme over the top.
  8. Finish with a drizzle of balsamic glaze and a tiny pinch of flaky sea salt to enhance the sugars.
