Ingredients:

  • 2 lbs ground beef (85/15 lean-to-fat ratio)
  • 1.5 cups herb-seasoned stuffing mix
  • 2 large eggs, beaten
  • 0.75 cup low-sugar steak sauce

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, whisk the eggs until frothy. Stir in the seasoned stuffing crumbs and half of the savory sauce (approx. 6 tablespoons) to hydrate the crumbs.
  3. Add the ground beef to the bowl. Using clean hands, gently fold the meat into the mixture until just combined, being careful not to overwork or squeeze the meat.
  4. Press the mixture into a 9x5 inch loaf pan or shape into a 5x9 inch rectangle on a rimmed baking sheet lined with parchment paper.
  5. Bake for 40 minutes. Remove from the oven and spread the remaining savory sauce over the top of the loaf.
  6. Return to the oven and bake for an additional 10 minutes, or until the internal temperature reaches 160°F (71°C) and the glaze is set.
  7. Let the meatloaf rest for 10 minutes before slicing to ensure the juices redistribute.
