Ingredients:
- 1 lb fresh strawberries, firm with stems intact
- 8 oz high-quality dark chocolate (60% to 70% cacao), finely chopped
- 1 tbsp refined coconut oil
Instructions:
- Wash the strawberries under cold water. Individually pat each berry bone-dry with a paper towel and let air dry for 10 minutes to ensure the chocolate adheres.
- Combine chopped dark chocolate and coconut oil in a microwave-safe glass bowl.
- Microwave in 30-second intervals, stirring vigorously between each, until the mixture is smooth and ribbon-like.
- Hold each strawberry by the stem and dip into the chocolate to coat 3/4 of the fruit. Shake gently to remove excess chocolate.
- Place the dipped berries on a parchment-lined baking sheet and rest for 15 minutes at room temperature, then refrigerate for 10 minutes until the shell is set.
